  • cooking spray
  • 12 cup chopped onion
  • 1 medium potato, peeled and cubed
  • 2 garlic cloves, minced
  • 1 (15 ounce) can whole corn, drained
  • 3 tablespoons flour
  • 12 teaspoon ground coriander
  • 18 teaspoon cayenne pepper
  • 2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans chicken broth
  • 1 cup milk
  • 2 medium tomatoes, chopped
  • salt and pepper
  • paprika (to garnish)

Directions

    Spray large saucepan with cooking spray.

    Saute onion, potato and garlic until onion is tender, about 5 minutes.

    Stir in corn, flour, coriander and cayenne; cook 1-2 minutes, stirring frequently.

    Stir in broth and heat to boiling.

    Reduce heat and simmer, covered, until potato is tender, about 10 minutes.

    Process mixture in food processor or blender until almost smooth; return to saucepan.

    Stir in milk and tomatoes; heat just to boiling.

    Reduce heat and simmer, uncovered, 5 minutes.

    Season to taste with salt and pepper.
