Creamed Mushrooms

  • 1 lb. fresh mushrooms
  • 6 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 3/4 tsp. salt
  • 1 c. milk
  • 1 c. half and half
  • 1/2 c. mushroom stock
  • 2 Tbsp. sherry

Directions

    Wash, stem and slice mushrooms.

    Slice stems and boil in 3/4 cup water for 8 to 10 minutes for mushroom stock.

    Saute the sliced mushroom caps in 3 tablespoons butter or margarine.

    Melt remaining butter or margarine; blend in flour and salt and slowly stir in the milk, half and half and mushroom stock.

    Boil until thick, stirring constantly.

    Add sauteed mushrooms and sherry.
