  • 1 lb. bag frozen pearl onions
  • 1/2 c. milk
  • reserved onion water for cooking, as needed
  • 1/2 c. chicken stock
  • 2 T. sherry
  • 1 c. grated high-end swiss
  • 1 T. butter
  • 2 T. flour
  • salt and pepper to taste

    If using frozen pearl onions, cook as per package directions, reserving a bit of the cooking liquid before you drain. Drain onions on a paper towel. In a separate pan, melt butter, add flour and milk and beat until smoooth. beat in stock, sherry, 1/2 c. cheese and onions. Pour into a small casserole dish, sprinkle with the remaining 1/2 c, swiss, and bake for 30 minutes at 350 till bubbling.
