Creamed Onions & Peas Recipe

Ingredients

  • 2 lbs. pearl onions, about same size
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • Salt & pepper to taste
  • Healthy pinch of nutmeg
  • 1 c. lowfat milk
  • 1 c. green peas, fresh or possibly frzn

Directions

    Peel onions and cut a small cross at root end of each.

    Place onions in a 3 qt saucepan, cover with water and cook till tender.

    Drain well.

    In medium saucepan heat butter.
  5. 5
    Stir in flour and cook for 1 minute over low heat.

    Season with salt, pepper and nutmeg to taste.

    Gradually stir in lowfat milk and cook over medium heat till thickened.

    Add in onions and peas and simmer 5 min.

    Makes 8 servings.
