Creamed Onions & Peas Recipe

Ingredients
- 2 lbs. pearl onions, about same size
- 2 tbsp. butter
- 2 tbsp. all-purpose flour
- Salt & pepper to taste
- Healthy pinch of nutmeg
- 1 c. lowfat milk
- 1 c. green peas, fresh or possibly frzn
Directions

1Peel onions and cut a small cross at root end of each.

2Place onions in a 3 qt saucepan, cover with water and cook till tender.

3Drain well.

4In medium saucepan heat butter.

5Stir in flour and cook for 1 minute over low heat.

6Season with salt, pepper and nutmeg to taste.

7Gradually stir in lowfat milk and cook over medium heat till thickened.

8Add in onions and peas and simmer 5 min.

9Makes 8 servings.
