  • 8 potatoes, cubed
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 Tbsp. parsley
  • 2 eggs, well beaten
  • 1/2 pt. sour cream
  • 1/4 c. vinegar
  • 1 stick butter
  • 4 Tbsp. flour
  • salt and pepper

Directions

    Peel and dice potatoes.

    Wash and place into a 4-quart pot. Cover with water to within 2 inches from the top.

    Add chopped onion, garlic and parsley.

    Stir in beaten eggs.

    Add salt and pepper.

    Let simmer until almost done.

    Add vinegar and sour cream to potatoes.

    Boil very slowly.
