- 1 tablespoon unsalted butter.
- 3 garlic cloves, minced
- 2 large shallots, chopped fine (about 1/3 cup)
- Salt and freshly ground black pepper
- Pinch of ground nutmeg
- 12 ounces baby spinach
- 1 teaspoon cornstarch
- 1/3 cup Greek yogurt
Directions

1Heat a large nonstick saute pan over medium heat.

2Add the butter to the pan, and when it has melted, add the garlic and shallots.

3Season with salt, pepper, and a pinch of nutmeg.

4Cook, stirring often, until the shallots are tender, about 4 minutes.

5Raise the heat to high and add half of the spinach.

6Season it lightly with salt and pepper.

7Toss and stir the spinach as it cooks down.

8When there is enough room in the pan, add the remaining spinach.

9Continue to cook, stirring often, until the spinach is tender, about 3 minutes.

10Sprinkle the cornstarch over the spinach and stir until combined.

11Continue to cook the spinach until the liquid has thickened, about 1 minute.

12Remove the pan from the heat.

13Add the yogurt and stir to coat the spinach.

14Season with salt and pepper to taste, if desired, and serve.
