Ingredients
- 3 squirrels, cut up
- seasoned flour
- 1/4 c. cooking oil
- 1 onion, chopped
- 1/2 c. mushrooms
- 1 c. dry white wine
- 1/2 tsp. thyme
- 1 Tbsp. parsley
- 1 c. light cream
Directions

1Roll squirrel in flour mixture.

2Heat oil and brown squirrel in frying pan.

3Remove squirrel.

4Add onions and mushrooms and fry 5 minutes.

5Add squirrel, wine, thyme and parsley.

6Mix well. Cover and simmer for 1 to 1 1/2 hours.

7Remove squirrel from pan and cool.

8Add enough water to pan to give 1 cup liquid.

9Add cream to this.

10Bring to a boil and thicken with flour.

11Add meat to sauce.

12Simmer, then serve.
