- 1 lb Bacon
- 1 clove Garlic (minced)
- 1/2 medium Cooking Onion (chopped)
- 2 can Cream Sweet Corn
- 1 can Coconut Milk
- 3 medium Potatoes (diced)
- 1 can Whole Kernel Corn (drained)
Directions

1Cook bacon in soup pot over medium heat until crispy (about 5 minutes).

2Put cooked bacon on paper towel to drain some of the grease.

3Add garlic and onion to the remaining bacon grease and cook while stirring until softened but not browned.

4Add cream corn, coconut milk and potatoes.

5Stir and then simmer while covered for about 10-15 minutes or until potatoes are tender.

6Add chopped cooked bacon and whole kernel corn and simmer uncovered for about 10 minutes.

7Add salt and pepper to taste.
