  • 1 (10-ounce) package frozen fordhook lima beans, thawed
  • 1/4 cup 2% reduced-fat milk
  • 1 1/2 tablespoons prepared horseradish
  • 2 tablespoons light butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

    Cook lima beans with 2 tablespoons water in a 2-quart microwave-safe dish at HIGH 6 minutes or until just tender. (Do not cook according to package directions.) Drain well.

    Combine beans and remaining ingredients in food processor; process 1 to 2 minutes, stopping 3 times to scrape down sides of bowl, or until mixture is smooth. Serve immediately.
