Creamy Lobster Soup

- 2 Tbsp. butter
- 1 onion, chopped
- 3 potatoes, diced small
- 2 c. hot light cream
- 2 c. hot milk
- 1/4 lb. mushrooms, diced
- 1 lb. frozen lobster meat, diced
- 1 Tbsp. chives, chopped
- salt and pepper
- dash of paprika
Directions

1Heat butter.

2When hot, add onion.

3Cover and cook 2 minutes over medium heat.

4Add potatoes and season well.

5Pour in cream and milk; season again.

6Bring to boil and cook 10 minutes over low heat.

7Add mushrooms and continue cooking.

8Stir in lobster and simmer 3 to 4 minutes over low heat.

9Sprinkle with chives and paprika before serving.
