- 6 plantains (green)
- 1 small red onion (sliced)
- 1/4 cup oil
- 1/4 cup vinegar
- salt
- 1/2 cup butter
Directions

1Peel and quarter the plantains.

2Boil until they break with the fork.

3As the platains are cooking, In a small sauce pan start pickling the onions with the oil and vinegar.

4Once they are transparent remove from flame.

5Drain the plaintains leaving a tablespoon or 2 of water, mash, add butter.

6Finally add onion mix into mashed plantains, folding them in.

7Enjoy! If you did it correctly it should stay soft all day.
