Creamy Mashed Potatoes

  • 2 pounds new potatoes peeled, cut into chunks
  • 1/3 cup heavy cream
  • 1/3 cup milk
  • 3 tablespoons butter plus extra to serve
  • fresh chives to serve

Directions

    Place potatoes in a saucepan and cover with water. Bring to a boil, covered. Partially remove lid and cook for 10-15 mins, until very tender. Drain. Return to pan and mash with heavy cream, milk and butter until smooth. Season.

    Serve topped with butter and sprinkled with chives.
