Asparagus Soup

- 1 tbsp butter
- 1 medium onion
- 3 clove garlic
- 1 stock vegetable stock
- 2 bunch asparagus
- 3 large potatoes
- 300 ml double cream
- 1 1/2 tsp salt
- 1 tsp black pepper
Directions

1slice onion and garlic and set aside.

2chop the ends off the asparagus and dispose.

3then cut asparagus in half and set aside.

4cut potatoes In medium sized cubes.

5wash asparagus and potatoes and drain.

6turn the hob on on medium heat.

7add butter to a deep pan and place on the hob.

8when butter melts add salt, pepper, onion and garlic and fry until it softens.

9when soft add potatoes and asparagus and saute for about 5 minutes.

10add water and stock and bring to the boil until potatoes and asparagus are soft and cooked, then turn off hob and set aside to cool for about 30 minutes.

11when cooled use hand blender and blend ensuring everything is blended.

12then add double cream, mix and reheat and serve.
