  • 2 cups passion fruit pulp
  • 1 cup caster sugar
  • 1 egg white
  • 300 ml sour cream, thickened cream can also be used here

Directions

    Place pulp, sugar and egg white in food processor.

    Beat at high speed for 10 minutes till thick and frothy.

    Place sour cream in a large bowl.

    Gradually stir in passionfruit mixture till smooth and combined.

    Pour mixture into a 10 cm x 20 cm loaf pan.

    Cover with plastic wrap.

    Freeze overnight till firm.

    Serve sliced or in scoops.
