Ingredients

  • 2 tbsp butter
  • 1 None onion, chopped
  • 1 clove garlic, crushed
  • 1 lb trimmed chicken livers, chopped
  • 3 oz cream cheese, softened
  • 1/4 cup cognac or brandy
  • 1 tsp thyme leaves, plus additional, to serve
  • None None Crackers, to serve

Directions

    Melt butter in a large skillet on high heat. Add onion and garlic; cook 2-3 mins, until onion is tender.

    Add chicken livers; cook 5-7 mins, until brown and cooked through. Transfer to a food processor. Add cream cheese and cognac or brandy. Season to taste. Process until smooth. Fold in thyme leaves. Spoon into a bowl. Cover with plastic wrap.

    Refrigerate 3 hours or overnight. Sprinkle with additional thyme and serve with crackers.
