- 2 stalks celery, chopped
- 1 bell pepper, chopped
- fresh parsley
- 1/4 tsp. pepper
- 1/4 tsp. salt
Directions

1Cook red beans 1 1/2 to 2 hours under low fire with ham hocks. Add seasonings after 2 hours of cooking, then let simmer for about 2 hours or until creamy. Serve with rice. Makes about 20 servings.
