Creamy Rice Pudding

  • 1 qt. raisins
  • 1 qt. water
  • 1 gal. Cold milk
  • 1 pkg. JELL-O Vanilla Instant Pudding
  • - ground nutmeg
  • 3 qt. Cooked long-grain white rice

Directions

    Place raisins and water in saucepan.

    Bring to boil on medium-high heat.

    Reduce heat to medium-low; simmer 5 minutes or until raisins are plumped.

    Drain raisins; cool.

    Pour milk into large bowl of electric mixer fitted with wire whip attachment.

    Add pudding mix and nutmeg.

    Beat on medium speed 2 minutes or until well blended.

    (Do not over beat.)

    Let stand 15 minutes.

    Fold raisins and rice into pudding mixture.

    Pour into full-size hotel pan (or half-size hotel pan for trial recipe).

    Refrigerate until ready to serve.
