Creamy Rice Pudding

  • 1 qt. milk
  • 1 c. uncooked regular rice
  • 1/2 tsp. salt
  • 1 1/2 tsp. vanilla extract
  • 4 egg yolks, beaten
  • 1/2 c. sugar
  • 1/2 c. half and half
  • 1 tsp. ground cinnamon

Directions

    Combine first four ingredients in a medium saucepan.

    Cover and cook over very low heat about 30 minutes or until rice is tender and milk is absorbed.

    Stir mix occasionally while cooking. Combine remaining ingredients in a small bowl.

    Gradually, stir about 1/4 of hot rice mixture into yolk mixture in small bowl; empty bowl contents into saucepan.

    Cook over low heat, stirring constantly, until mixture comes to a boil.

    Remove from heat. Serve warm or cold.
