- 1/2 c. rice
- 4 c. milk
- 1/4 c. butter
- 3 eggs
- 3/4 c. sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
Directions

1Combine rice and 2 cups milk in top of double boiler; cover and cook over hot water until rice is tender.

2Add butter.

3Beat eggs; mix in sugar, vanilla, salt and remaining milk.

4Add hot rice mixture, mixing well.

5Pour into buttered 2-quart baking dish.

6Sprinkle with nutmeg.

7Bake in 350° oven for 50 minutes or until silver knife comes out clean when inserted.

8Serves 6.
