Creamy Scrambled Eggs

- 1 to 2 Tbsp. butter or margarine
- 3 oz. very soft cream cheese
- 6 eggs
- 1/2 c. milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Melt as much butter as desired in a frypan set at 320° or medium heat.

2Cream the cream cheese in mixer bowl on #4 speed until creamy.

3Add eggs; beat 1/2 minute on #8 speed.

4Scrape bowl and beaters.

5Add milk, salt and pepper.

6Blend in on #4 speed.

7Pour mixture into frypan.

8Cook slowly, scraping a few times from bottom and sides with a spoon.

9Do not stir constantly. Cook only until set, but still moist.

10Serve with bacon, ham or sausage.

11Garnish with chopped parsley or chives.

12Serves 4 to 6.
