- 1 cup basmati rice
- 1 1/2 cups water, plus more for steeping
- 2 quarts half-and-half
- 1 cup sugar
- 1 cup raisins
- 1 teaspoon ground cardamom
- 1/2 cup chopped pistachio nuts, for garnish
Directions

1Steep the rice in a bowl of water for 20 minutes.

2Drain and rinse the rice.

3Add the 1 1/2 cups of water and the rice to a medium sauce pot.

4Bring the water to a boil over medium heat, cover, then reduce the heat and simmer for 15 to 18 minutes.

5In a large saucepan combine the half-and-half, the sugar, raisins and cardamom.

6Add the rice and bring to a gentle simmer, uncovered, for 25 minutes.

7Remove from the heat, let cool and scoop into small bowls.

8Serve sprinkled with pistachios and enjoy!!
