- 1 lb. veal cutlets (untrimmed)
- 4 Tbsp. butter
- 1 1/2 pt. cream
Directions

1Heat heavy skillet.

2When very hot, add 2 tablespoons butter. When it smokes, add cutlets and brown thoroughly on both sides. Remove from fire, trim off all gristle and fat, cut into 1/2-inch cubes.

3Add remaining to pan and when hot, add cubed veal.

4Again, brown on all sides.

5When meat is browned, add cream and salt. Lower heat and simmer 30 to 40 minutes until thickened.

6Do not boil.

7Serve over toast, toasted on one side only, toasted side down.

8Serves 2.
