Ingredients

  • 2 1/8 cups milk
  • 1 vanilla bean sliced lengthwise in half
  • 1 orange peel
  • 1 lemon peel
  • 4 egg yolks
  • 5/8 cup sugar
  • 1 1/4 tablespoons cornstarch
  • 4 teaspoons brown sugar

Directions

    In a pot, heat the milk up with the vanilla bean, orange peel, and lemon peel.

    When it starts to boil, turn off the heat and remove the solids.

    In another bowl, whisk together the egg yolks, sugar, and cornstarch.

    Constantly whisking, incorporate the egg yolk mixture into the hot milk.

    Put the milk back on low heat until it thickens.

    Pour the thickened cream into 4 individual ramekins and let cool.

    Sprinkle 1 teaspoon of brown sugar over the top of each ramekin and caramelize it either using a handheld flame or the broiler of the oven.
