- 1 lb. pinto beans, soaked overnight
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, chopped
- 1 1/2 lb. sausage (hot smoked)
- ham hock to taste
- parsley to taste
- salt and red and black peppers to taste
Directions

1Soak beans overnight; add onion, green pepper and garlic. Boil 1/2 hour, then lower to simmer.

2Cook sausage in a bit of water 15 minutes to draw out most of the fat.

3Add to beans.

4Add remaining ingredients.

5Slowly cook for 2 or 3 hours.

6Add water if needed.

7If you want real thick gravy, crush lots of beans after they begin to fall apart.

8Serve over rice.
