- 2 lb. deboned cooked chicken, cut up
- 2 c. chopped onions
- 1 c. celery
- 1 medium size green pepper
- 1 stick butter
- 1 1/2 c. tomato sauce
- 1 tsp. cayenne pepper
- 1 tsp. basil
- 1 c. peeled and chopped tomatoes
- salt and pepper to taste
Directions

1In a large 3-quart pot, melt butter and saute vegetables.

2Add tomato sauce, tomatoes and seasonings.

3Let simmer for 15 minutes.

4Then add chicken and let simmer another 10 minutes. Serve over a bed of rice.
