Ingredients
- 2 small eggplants
- 4 bacon slices
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- 1/2 c. fresh mushrooms, sliced
- 2 c. tomatoes, peeled and chopped
- 1 c. Mozzarella cheese
- 1/4 tsp. pepper
Directions

1Wash eggplants; cut in halves lengthwise.

2Remove pulp, leaving 1/4-inch shell.

3Chop pulp.

4Combine bacon, onion, green pepper and mushrooms in large skillet.

5Saute until bacon is crisp.

6Add eggplant pulp, tomato, salt and pepper.

7Bring to a boil, then simmer 10 minutes.

8Place eggplant shells in 10 x 6 x 2-inch pan.

9Place hot mixture into shells.

10Add 1/2 inch water. Sprinkle cheese on top and bake at 350° for 30 minutes.
