  • 2 lb. thick fish fillets
  • 2 Tbsp. margarine
  • 3/4 c. celery, diced
  • 3/4 c. diced carrots
  • 1/4 c. black olives
  • 1/2 c. green pepper, diced
  • 1 red onion, chopped
  • 1 (16 oz.) can tomatoes
  • 3/4 c. tomato sauce

Directions

    Pour 2 tablespoons margarine in bottom of baking pan.

    Combine celery, carrots, olives, green pepper, onions, tomatoes and tomato sauce.

    Spread half of mixture in bottom of pan.

    Place fish on top.

    Cover with remaining mixture.

    Dot with margarine.

    Bake 30 to 35 minutes in a 350° oven.
