- 2 slices red snapper or other fish
- 1 slice yam
- 1 small onion
- 1 tomato, sliced
- 2 tsp. margarine
- 1 tsp. vinegar
- salt, pepper and thyme to taste
- 3 Tbsp. water
Directions

1Season fish with salt, pepper, vinegar and thyme.

2Fry in margarine; take out when half done.

3Fry onion and yam in same margarine until brown; add water and tomato slices.

4Let cook for 10 minutes; add fish and cook slowly for 15 minutes.

5Serve hot. Serves 4.
