- 3 slices bacon, diced
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 c. sliced okra
- 1 c. uncooked rice
- 2 c. chicken broth
- 1 tsp. salt
- 1/8 tsp. black pepper
Directions

1Saute bacon until crisp.

2Drain off all but one tablespoon of drippings. Add onion, green pepper and okra.

3Cook until vegetables are tender-crisp.

4Stir in rice, broth and seasonings. Bring to a boil. Reduce heat.

5Cover and simmer for 15 minutes. Add tomatoes and fluff lightly.

6Replace lid and let stand 12 minutes.

7Serves 6.
