Creole Okra and Tomatoes

  • 2 tablespoons butter
  • 1 large onion
  • 1 lb small okra pods, caps trimmed
  • 1 tablespoon water
  • 2 firm tomatoes, cut into wedges
  • 1 teaspoon brown sugar
  • 12 teaspoon salt
  • 12 teaspoon pepper

    In a large skillet, heat butter and saute onion and okra.

    Cook about 5 minutes.

    Add 1 to 2 tablespoons water if mixture is dry or sticky.

    Add tomatoes, sugar, salt and pepper.

    Stir to combine.

    Cover and cook over low heat just until tomatoes are heated through, about 1 minute.
