Ingredients

  • 1 c. long grain rice
  • 3/4 c. onion, diced
  • 1 c. water
  • 2 tsp. vegetable oil
  • 2 ribs celery, peeled and diced
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. hot red pepper sauce
  • black pepper to taste
  • 2/3 c. red pepper, stemmed, seeded, de-ribbed and diced
  • 2 c. canned Italian plum tomatoes with juice, chopped
  • 3 cloves garlic, smashed, peeled and sliced

Directions

    Place red pepper, onion, celery, garlic and vegetable oil in a 13 x 9 x 2-inch oblong pan and stir to combine.

    Cook, uncovered, on High in microwave for 4 minutes.

    Remove from oven; stir in rice, tomatoes and juice, hot pepper sauce and water.

    Cook, uncovered, for 25 minutes, stirring 3 times, on High in microwave. Remove from oven.

    Stir in lemon juice and black pepper to taste. Serve hot.
