Ingredients
- 2 1/2 lb. yellow or zucchini or eggplant
- 3 Tbsp. butter
- 1/4 tsp. red pepper
- 3 Tbsp. flour
- 1 medium onion, chopped
- 3 large fresh tomatoes, chopped
- 1 tsp. salt
- 1/4 c. fresh minced basil or 1 tsp. dried
- bread crumbs and Parmesan cheese
Directions

1Cook squash. Drain well. In heavy skillet, melt butter.

2Add flour and blend.

3Add onion, green pepper, tomatoes and seasonings.

4Cook 5 minutes.

5Place drained squash in greased shallow casserole.

6Pour sauce over this. Top with crumbs and cheese.

7Bake at 350° for 30 minutes. Serves 10 to 12 generously.
