Ingredients

  • 2 1/2 lb. yellow or zucchini or eggplant
  • 3 Tbsp. butter
  • 1/4 tsp. red pepper
  • 3 Tbsp. flour
  • 1 medium onion, chopped
  • 3 large fresh tomatoes, chopped
  • 1 tsp. salt
  • 1/4 c. fresh minced basil or 1 tsp. dried
  • bread crumbs and Parmesan cheese

    Cook squash. Drain well. In heavy skillet, melt butter.

    Add flour and blend.

    Add onion, green pepper, tomatoes and seasonings.

    Cook 5 minutes.

    Place drained squash in greased shallow casserole.

    Pour sauce over this. Top with crumbs and cheese.

    Bake at 350° for 30 minutes. Serves 10 to 12 generously.
