  • 3 lb fresh cod
  • 3 tbsp hellmans mayonnaise
  • 1 cup seasoned panko crumbs
  • 1 cup instant potato flakes

    Preheat oven to 400F.

    Cut filets into 3-4 inch wide pieces.

    In a medium bowl mix panko and potato flakes together.

    Brush both sides of filets with mayonnaise the coat well with crumb mixture and place in a greased baking dish in a single layer.

    Bake for 35-40 minutes or until fish is flaky and crumbs are crispy browned.

    Serve with lemon butter sauce.
