Crispy Caramel Corn

  • 7 qt. popped corn
  • 1 c. peanuts (optional)
  • 2 c. brown sugar
  • 1 c. margarine
  • 1/2 c. white corn syrup
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda

Directions

    Measure the brown sugar, margarine, corn syrup and salt into saucepan.

    Bring to a boil and boil 5 minutes.

    Remove from heat and stir in the vanilla and baking soda.

    Pour mixture over freshly popped corn and peanuts.

    Mix well and turn out on cookie sheets or cake pans.

    Place in 250° oven for 1 hour.

    Stir occasionally while in oven.

    When corn is removed from oven and cooled enough to handle, the kernels can easily be separated and stored in tightly covered containers.
