  • 1 c. yellow corn meal
  • 2 eggs, well beaten
  • 1 c. sweet milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1/2 c. Wesson oil
  • 1 (16 to 17 oz.) can cream-style corn
  • 1/2 lb. ground beef
  • 1 large onion, finely chopped
  • 1/2 lb. rat cheese or mild Cheddar cheese, grated
  • 2 jalapeno peppers, chipped (or 3 medium size)

Directions

    Mix the first 7 ingredients; set aside.

    Saute the ground beef; let drain.

    Prepare the onion, cheese and peppers and place in separate mounds ready to use.

    Grease a large iron skillet; heat.
