- 1/2 cups Evaporated Milk
- 1 Tablespoon Salt
- 1 dash Pepper
- 1 cup All-purpose Flour
- 1/2 cups Yellow Corn Meal
- 2 teaspoons Paprika
- 4 whole Catfish Fillets
- 1/2 cups Canola Oil
Directions

1In a small mixing bowl combine milk, salt and pepper.

2In another mixing bowl combine flour, cornmeal and paprika.

3Dip the fish fillet in the milk and then coat with the flour.

4Cover the bottom of a skillet in canola oil and heat over medium-high heat.

5When the oil is heated, add the fillets and brown on each side until flaky, approximately four minutes per side.

6Serve immediately.
