- 7 c. unsweetened cereal, crushed to 1 3/4 c.
- 1 egg
- 1 c. low-fat milk
- 1 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 lb. chicken, cut up and skinned
- 3 Tbsp. butter, melted
Directions

1Measure the crushed cereal into a shallow dish or pan.

2Set it aside.

3In a small bowl, beat the egg and milk slightly with a fork.

4Add the flour, salt and pepper; mix until smooth.

5Dip the chicken pieces in the mixture.

6Roll the pieces in the crushed cereal.

7Place the pieces in a single layer in a greased or foil-lined shallow baking pan.

8Drizzle the melted butter over the chicken.

9Bake at 350° for about 1 hour or until the chicken is tender.

10Don't cover the pan or turn the chicken while baking.
