  • 7 c. unsweetened cereal, crushed to 1 3/4 c.
  • 1 egg
  • 1 c. low-fat milk
  • 1 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 lb. chicken, cut up and skinned
  • 3 Tbsp. butter, melted

    Measure the crushed cereal into a shallow dish or pan.

    Set it aside.

    In a small bowl, beat the egg and milk slightly with a fork.

    Add the flour, salt and pepper; mix until smooth.

    Dip the chicken pieces in the mixture.

    Roll the pieces in the crushed cereal.

    Place the pieces in a single layer in a greased or foil-lined shallow baking pan.

    Drizzle the melted butter over the chicken.

    Bake at 350° for about 1 hour or until the chicken is tender.
