- 2 eggs, slightly beaten
- 1/4 c. mustard
- 1/2 tsp. seasoned salt
- 1 frying chicken, cut up
- mashed potato flakes
- 2 Tbsp. butter or margarine
Directions

1Lightly beat together eggs, mustard and seasoned salt.

2Dip chicken in mustard mixture, then roll in potato flakes until well coated.

3Melt butter in shallow baking pan.

4Arrange chicken, skin side down, in pan.

5Bake in 400° oven for 30 minutes.

6Turn chicken and bake 20 to 30 minutes longer until tender and brown.

7Makes 4 to 5 servings.
