- 6 chicken breast halves, boned
- 1 1/4 c. cooked shrimp, chopped
- 1/3 c. softened margarine
- 1/2 c. chopped green onion
- oil
- 1 c. flour
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 3/4 c. water
Directions

1Bone chicken breasts if not previously boned.

2Pound each half breast to about 1/4 inch thickness.

3Combine chopped shrimp, margarine and green onion.

4Salt and pepper to taste.

5Spoon shrimp mixture onto center of each breast.

6Roll breast and skewer or secure with toothpick.

7Heat 1 inch oil in skillet.

8Make batter from flour, baking powder, salt and water.

9Roll or dip each breast in batter.

10Fry in hot oil until golden brown (about 15 minutes), turning frequently.

11Drain on paper towels.

12Serve quickly to retain crispiness.
