  • 2 large idaho potatos
  • 3 oz cream cheese
  • 2 tbsp sour cream
  • 2 stock scallions
  • 2 tsp lemon zest
  • 1 egg
  • 1 salt & pepper
  • 1 tbsp extra- virgin olive oil
  • 1 tbsp butter

    peel and dice potatoes

    boil potatos in salted water till tender

    drain potatoes and return to pot to dry

    transfer potatoes to a bowl

    soften cream cheese in a microwavable bowl for 20 sec.

    add potatos, sour cream, soallions, lemon zest, eggs, salt & pepper then mash/mix together

    heat oil and butter in a pan for over medium heat

    drop 2-inchs mounds of potato into skillet and gently flat down

    crisp potatoes untill golden brown on both sides, about 7 to 8 min.
