- 2 large idaho potatos
- 3 oz cream cheese
- 2 tbsp sour cream
- 2 stock scallions
- 2 tsp lemon zest
- 1 egg
- 1 salt & pepper
- 1 tbsp extra- virgin olive oil
- 1 tbsp butter
Directions

1peel and dice potatoes

2boil potatos in salted water till tender

3drain potatoes and return to pot to dry

4transfer potatoes to a bowl

5soften cream cheese in a microwavable bowl for 20 sec.

6add potatos, sour cream, soallions, lemon zest, eggs, salt & pepper then mash/mix together

7heat oil and butter in a pan for over medium heat

8drop 2-inchs mounds of potato into skillet and gently flat down

9crisp potatoes untill golden brown on both sides, about 7 to 8 min.
