Crispy Oven-Fried Chicken

- 2/3 c. potato flakes
- 1/4 c. grated Parmesan cheese
- 2 tsp. parsley flakes
- 1/2 tsp. onion powder
- 1/8 tsp. paprika
- fresh ground pepper to taste
- 2 to 3 lb. chicken (or less using boneless breasts)
Directions

1Heat oven to 375°.

2Line a shallow pan with foil, or grease it lightly with spray.

3In a plastic bag, mix potato flakes, cheese, parsley, onion powder, paprika and ground pepper.

4Moisten chicken parts with water, milk or margarine.

5(For a low-fat meal, remove skin from chicken before moistening.)

6Shake each piece in the plastic bag until well coated.

7Place chicken pieces in pan.

8Bake for 60 to 75 minutes until chicken is tender and golden brown. (Boneless and/or skinless pieces will take less time.)
