  • 1/4 c. beer
  • 1 large egg white
  • 1/2 tsp. salt
  • 3/4 c. fine, dry, unseasoned breadcrumbs
  • 1/4 c. finely chopped pecans (1 oz.)
  • 1/4 tsp. ground black pepper
  • 1 lb. medium shrimp, peeled and deveined
  • 4 lemon wedges

    Lightly oil a rack large enough to hod shrimp in a single layer.

    Set rack on a baking sheet.

    In medium bowl whisk together flour, beer, egg white and 1/4 teaspoon salt until creamy and smooth.
