Crock-Pot Bean Chowder

  • 1 pkg. dried large lima beans
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 1 c. chopped celery
  • 2 large potatoes, cubed in 1/2-inch pieces
  • 1 can tomatoes (Creole)
  • 1 medium clove garlic, minced
  • 1 large can cream of chicken soup
  • 2 soup cans water
  • 1 bottle Hormel bacon bits
  • 2 tsp. Creole seasoning (more or less according to taste)

Directions

    Wash and drain lima beans.

    Place in large crock-pot.

    Add all the other ingredients; mix well.

    Cook for 4 hours on high, then for 4 hours on medium.

    Serve with cornbread.

    Yields 6 to 8 servings.
