  • 8 lb. pork roast
  • zest of 1 orange
  • 1 garlic clove
  • 3 to 4 Tbsp. rosemary
  • 1 1/2 Tbsp. olive oil

    Heat oven to 425°. Position rack in lower half of oven. Season with salt and pepper. Brush meat with 4 tablespoons olive oil. Place meat in heavy-duty roasting pan with rack (large enough not to crowd sides). Roast 15 minutes. Reduce heat after 45 minutes until meat is well browned and meat thermometer registers 170° to 180° (about 1 1/2 to 2 hours). Spread season mixture over meat (inside and out).
