- 2 1/2 c. nonfat, low sodium chicken or vegetable broth
- 3 to 4 green onions, chopped
- 1 c. brown rice
- 1 tomato, chopped
- 1/4 c. fresh or frozen corn
- 2 to 4 Tbsp. canned diced green chiles
- 1 Tbsp. Dijon style mustard
- 1/4 c. chopped water chestnuts
Directions

1Combine stock or broth and green onions in saucepan.

2Bring to boil and add rice.

3Reduce heat, cover and simmer 45 minutes. Uncover.

4Stir in corn, tomatoes, chestnuts, green chiles and mustard.

5Serve warm.
