  • 1 can (14-1/2 oz.) vegetable broth
  • 1 medium red onion, chopped
  • 1/2 cup sliced dried apricots
  • 1 Tbsp. olive oil
  • 1 pkg. (10 oz.) couscous
  • 1 pkg. (2.25 oz.) PLANTERS Sliced Almonds, toasted
  • 2 Tbsp. chopped fresh mint leaves

Directions

    Combine broth, onions, apricots and oil in medium saucepan.

    Bring to boil on medium-high heat.

    Stir in couscous; cover.

    Remove from heat; let stand 5 min.

    Fluff couscous with fork.

    Add almonds and mint; mix lightly.
