- 1 medium red onion, chopped
- 1/2 cup sliced dried apricots
- 1 Tbsp. olive oil
- 1 pkg. (10 oz.) couscous
- 1 pkg. (2.25 oz.) PLANTERS Sliced Almonds, toasted
- 2 Tbsp. chopped fresh mint leaves
Directions

1Combine broth, onions, apricots and oil in medium saucepan.

2Bring to boil on medium-high heat.

4Remove from heat; let stand 5 min.

5Fluff couscous with fork.
