- Vegetable-oil cooking spray
- 1/2 cup sugar
- 1 teaspoon light corn syrup
- 1 tablespoon water
- Pinch of salt
- 1/3 cup toasted and skinned hazelnuts (see page 343)
Directions

1Coat a rimmed baking sheet with cooking spray.

2Combine sugar, corn syrup, water, and salt in a small saucepan over medium-high heat, stirring constantly until sugar dissolves.

3Continue to cook, without stirring, until deep amber.

4Remove from heat and stir in nuts.

5Immediately pour mixture onto prepared baking sheet, and spread into an even layer.

6Let cool completely on sheet on a wire rack.

7Break praline into medium-size pieces, and transfer to a resealable plastic bag.

8Using a rolling pin, crush into pea-size portions.
