Crusted Lamb Chops

  • 12 None lamb chops, French trimmed
  • 8 oz cherry tomatoes on the vine
  • None None Olive oil
  • None None Steamed green beans, to serve
  • None None FOR THE CRUST
  • 1/2 cup fresh breadcrumbs
  • 1/2 cup chopped green olives
  • 1/2 cup coarsely chopped parsley
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil

Directions

    Preheat the oven to 400°F. Brush lamb and tomatoes with olive oil. Season to taste. Arrange on foil-lined baking pan.

    For the crust, pulse breadcrumbs, olives, parsley, Parmesan cheese and oil in a food processor until mixture is well chopped. Press crust mixture on top of lamb chops.

    Bake for 10-15 mins, until lamb is cooked to desired doneness and crust is golden. Serve with roasted tomatoes and green beans.
