- 1 eggplant, cubed
- 2 zucchini squash, cubed
- 1 large onion, chopped
- 1/4 c. oil
- 4 tomatoes, peeled and chopped
- 3 eggs
- 3/4 c. Parmesan cheese
- 1 tsp. parsley
- 1/2 tsp. basil
- 1/2 tsp. oregano
- salt and pepper to taste
- 1/4 c. Mozzarella cheese
Directions

1Saute first 4 ingredients 10 minutes.

2Add tomatoes.

3Cover; simmer 20 minutes.

4Beat eggs, seasonings and 1/4 cup cheese.

5Add vegetables.

6Pour half of the mixture into greased 10-inch pie pan.

7Top with 1/4 cup cheese.

8Layer remaining mixture and cheese on top.

9Top with Mozzarella cheese.

10Bake at 350° for 40 to 45 minutes or until set.
