  • 1 c. all-purpose flour or 1/2 c. all-purpose flour and 1/2 c. whole wheat flour
  • 1 c. self-rising cornmeal (cornmeal mix)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1 1/2 c. buttermilk

Directions

    Combine flour(s), cornmeal, baking powder and salt.

    Make a well in the center of the dry mixture and add the egg.

    Stir in the buttermilk and mix.

    Spray an 8 x 8 x 2-inch baking tin with nonstick cooking spray.

    Spread batter evenly in pan.

    Bake 25 to 30 minutes in a 425° oven.
